Quinoa Salad

Preparation

  1. Rinse quinoa under cold water until water runs clear.
  2. In a saucepan, combine quinoa with 2 cups of water. Bring to a boil, reduce heat, cover, and simmer for 15-20 minutes until tender.
  3. Fluff cooked quinoa with a fork and allow it to cool.
  4. In a large bowl, mix quinoa with diced cucumber, tomatoes, avocados, and bell pepper.
  5. Add chopped parsley and spinach. Toss to combine.
  6. In a small bowl, whisk olive oil and lemon juice with salt and pepper to make the dressing.
  7. Drizzle dressing over the salad and mix well.
  8. Top with roasted cashews before serving.
